Prepare a parcel type package for each child, then allow them to unwrap one layer when you reach so many miles or certain destinations. In each layer ensure there is a surprise, maybe a small toy, colouring book, drink, snack or a challenge ie. spot 10 red cars. The kids really enjoy it and it keeps them occupied for surprisingly long time.
